Hubby's favorite

My hubby has raved so much about this meal to his parents that my mother-in-law requested the recipe! The original (and the picture) comes from the Kraftfoods website, but I make it my own way. Here's my version.Polynesian Meatballs

1/2 cup BBQ sauce (we like Jack Daniel's original recipe)
1 can (20 oz.) crushed pineapple, with about half of the liquid drained off
16 oz package frozen meatballs, either "original" or Italian flavored
1 green pepper, chopped into 1 inch pieces
1 cup rice, either brown or jasmine are great!

First start the rice by whatever method you prefer. I throw it in the rice cooker, but I'm sure that there is some other way to make it...

In a large skillet, mix the BBQ sauce and the pineapple. Bring to a boil over med-high. Add the meatballs and the pepper and simmer 10-15 minutes, until the meatballs are warmed through and while the pepper is still crisp.

Serve over the rice. Add a tall glass of milk and you've got 4 food groups!

Yum!

Sounds great--a quick and easy meal! I just got a rice cooker and love it and use it all the time . . dinner tonight!

That's great that he likes it so well! My husband is INCREDIBLY picky. He won't even eat chicken or fish! I might have to try this one on him!

OMG! My husband makes these with his secret recipie from scratch! He's a cook. I'll give you a hint... a little bit of horseradish is awsome! Tha baby eats it so I'm not talking a whole lot. I've no clue the exact measurement.
